Easy Recipe: Chocolate-Covered Coconut Patties

These are my husband’s request every birthday.

It always makes me happy when he does, because I first made them as an inspiration, out of my pantry cupboards & imagination. I had just made some homemade peppermint patties, saw shredded coconut in my pantry, and wondered if the peppermint patty recipe could take some variants.

So I set out to try my hand at inventing other flavors of patties.

This was the first one I tried, and it’s actually the only one I’ve tried so far. It was such a hit that it’s now our house favorite.

These are easy to whip together, a simple candy that is sure to amaze!

All you need is butter, cream, powdered sugar, vanilla extract, coconut extract, shredded coconut, and chocolate chips.

Chocolate-Covered Coconut Patties Recipe

In a large mixing bowl, beat together

  • 2 tablespoons soft butter
  • 2 tablespoons cream
  • 2 teaspoons coconut extract
  • 1/2 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 1 cup shredded coconut

Scoop the mixture into balls, then flatten into uniform discs. Refrigerate for at least 30 minutes, covered.

Melt 2 cups chocolate chips in the microwave.

Dip one-half of each disc into the melted chocolate. Just pick it up and dunk it. Let the excess chocolate drip off or wipe it along the side of the dish before placing it on parchment paper or wax paper to set.

After each disc is half-dipped, set them in the fridge until completely dry and firm.

If necessary, remelt the chocolate. Then finish dipping the other half of each disc. Let set.

Store covered in the fridge.

With a butter-cream-and-powdered-sugar base, you could create your own variants, also. Orange would be delicious, especially with a little orange peel stirred in. Cherry will probably be my next experiment, with bits of chopped maraschino. Check out the extracts you have on hand, use them to flavor the filling, then dip them in chocolate.
